Today has been a long, long day. I went to the library while Alex was in class this morning, and every single source that my Professor of Doom recommended for my paper was either on reserve or checked out. I shall be spending much time in the library, I fear. This confuses and infuriates me. I dislike studying in the library, but I shall probably be carrying my little laptop up there a good deal next week to get my research done. Meh.
So, after that frustration, Alex and I continued helping his mother move. Moving is never fun, and moving other people is less fun. Plus, my mom-in-law stresses. I was already stressed, and both Alex and I are sick. (Alex is much worse off than I am, poor guy. He's wiped out and cold.) It rained a lot today, so we were cold and wet. I was particularly cold (only took my coat off once even when I was in the house, and I was wearing a sweater and a turtleneck and everything), and we were both grouchy and miserable. Then we were on our way home, and I wanted to stop for something to eat, but Alex really wanted to get home. I remembered that we had eggs at home, so I agreed to make that, instead. Alex was grateful. I was grateful, too--I made my favorite eggs. Here's the very simple recipe:
Elfie's Favorite Eggs
Ingredients:
2 Eggs
2 slices prosciutto, torn into small pieces (Parma prosciutto is best, as it is less salty)
1 generous pinch of dried oregano
1 small pinch salt
4 good grinds of pepper
1/4 cup finely grated parmesan cheese (Parmesano Reggiano is the best)
1 pat butter
Directions:
In a small bowl, put eggs, oregano, salt, and pepper. Mix with a fork until the ingredients are combined. When the egg is combined with the seasonings, heat the butter in a small nonstick pan. When the butter is melted, pour in the egg mixture. Begin stirring immediately with a spatula, scrambling the egg in the pan. Once the egg is mostly cooked, add the prosciutto. Use the spatula to mix the prosciutto with the eggs. This should take only a few seconds. When the eggs are cooked and beginning to turn golden brown and delicious, add the grated parmesan. Mix the cheese into the rest of the ingredients, then quickly remove the pan from the heat. Dump the eggs onto a plate and eat them while they're hot!
These eggs make me very, very happy. They're the perfect dinner when I want something hot, but I'm feeling too tired to cook much of anything. They cook up in about five to seven minutes, require very little prep time, and are absolutely delicious, if I do say so myself. They're not exactly fantastic for you, but I don't care at this point. It is also important to point out that you must use butter as the cooking fat. Less fatty options will not give you the same yummy flavor.
I also had some M&Ms. Only a few, but still...necessary chocolate. Yummy.
Tomorrow, we have to help Alex's mom finish moving, and I have to work on a paper on Origen of Caesarea. We have agreed that we shall not go to Alex's mom's house before noon, as Alex needs more sleep. (It's only 8:40, and he's already asleep on the couch. Poor guy.)
I have almost enough notes to really start writing my latest story, Cassandra's Conundrum. I may copy you NaNoWriMo people and post bits of it here. (I know; I've said that before about other stories. I'm such a tease.) Swashbuckler Files is going on the back burner for now.
Well, I'm off to do a bit more plotting, and then maybe some writing. Or maybe I'll work on my irritating papers. Who knows?
